Favorite Recipes: Stuffed Bell Peppers

My husband doesn't like a lot of vegetables. He was a little reluctant for me to make this recipe, but I bought the ingredients. You can't waste perfectly good ingredients, right?




He ended up loving it! It was absolutely delicious and simple.

This recipe fed two adults. We each had two. I could have had one with a vegetable on the side, but the pregnant side of me wanted a lot more! ;)

My Ingredients:

  • 4 Bell Peppers (I choose red, yellow and orange)
  • 1/2 pound of hamburger meat
  • 1 cup of Minute brown rice (instant)
  • 1 cup of shredded cheese- your choice
  • 2 TBS of tomato paste
  • cajun seasoning
  • salt and pepper 


To Do:

  • Heat oven to 350 degrees.
  • Bring a big pot of water to a boil for the peppers. While water is boiling cut off the tops of the peppers and take out the seeds. Toss them in the boiling water for around 5 minutes. When finished put them on a paper towel to begin drying.
  • Make the Minute brown rice as instructed on the box.
  • Brown your hamburger meat.
  • Add tomato paste (a little water if needed) to the browned hamburger meat. 
  • Add cajun seasoning, salt and pepper to meat to taste.
  • Pour cooked rice into the meat. Mix.
  • Pour 1/4-1/2 cup of your cheese into the hamburger and rice mix. 
  • Place peppers into a pan to fill them. (I used a loaf pan)
  • Fill each pepper up with the rice and meat filling.
  • Put the rest of the cheese on top of the peppers. 
  • Place peppers in the oven for 20-30 minutes.
  • Enjoy!
This was my very first experience with stuffed bell peppers. They were so, so good! I can't wait to have them again. I more than simplified my recipe from others that I found online. My recipe is a mixture of ones that I've stumbled across on Pinterest and on blogs, but I knew that I was going to have to make it a little more simple ingredient wise and it turned out perfectly!
