Recipe: Gluten Free Chicken Noodle Soup



Ever since I've had to start cooking gluten free for my husband I've had to come up with some simple recipe solutions. I don't like to spend a ton of time in the kitchen even though I love to cook up new recipes. I just prefer to spend my time elsewhere. My mom sent me a gluten free recipe for chicken noodle soup and made it one night and it was delicious, however I felt I needed to simplify it just a little and use some of our favorite ingredients. 

First of all these are some of my most favorite ingredients to use in the soup.


Carrots give it a little extra hint of flavor plus some extra nutrients. I can't get my husband to eat carrots unless they are sauteed into this soup so I take my opportunities when I can.

Fresh Express makes a great Baby Kale mix that also includes spinach. I sauteed it with the carrots and the onion that I add to make for a little extra. It was super yummy and yet another item my husband won't eat unless it is sauteed. 

Here are the two most important gluten free aspects of this chicken noodle soup.

Barilla Gluten Free Penne Pasta is our favorite pasta to put in this soup. I've tried a couple different kinds of pasta and I always come back to this. Plus it's an affordable gluten free pasta option and on sale often at our Dillon's (Kroger affiliated store). 

Orrington Farms Broth Base and Seasoning Chicken Flavored makes this soup. This is super yummy and gluten free. Yay for us! 

What you need:

  • 1/3-1/2 of an onion cut up
  • 1/4 cup stick butter
  • 2 handfuls of Fresh Express Baby Kale Mix
  • 1-2 cups of baby carrots cut up
  • 2 chicken breasts boiled
  • 1 box of Barilla Gluten Free Penne Pasta
  • 8-10 teaspoons of Orrington Farms Broth Base and Seasoning Chicken Flavored
  • 10-12 cups of water

What to do:

  • Melt the butter in your biggest pot.
  • Cut up your onion and throw it in the pot.
  • Cut up your baby carrots and throw them in the pot to cook with the butter and onion.
  • Cut up your baby kale mix and throw that in with everything else.
  • Stir every once in awhile until you see that everything is beautifully cooked in the butter. Soak up the scent! It's one of my favorites when cooking!
  • Add 8 cups of water. Make sure you have the burner on high to get it to boil.
  • Add 8 teaspoons of Orrington Farms Broth Base and Seasoning. 
  • Wait until it is at a full roaring boil and then add in the box of Barilla Gluten Free Penne Pasta. 
  • Boil until the noodles are fat and soft. 
  • Cut up the chicken breasts that have been boiled and cooled while the noodles are cooking. 
  • When the noodles are finished cooking throw the cut up chicken in the pot. 
  • Add 2 to 4 cups of water into the pot to fill it up without over watering it. 
  • Let it warm back up. 
  • If necessary add in a little more Orrington Farms Broth Base and Seasoning if you don't have enough flavoring. 
  • Serve Hot. 


I would say this serves 4-6 people with hearty servings. My husband eats a lot of it so I make it and we have it one night with us and my 3 year old son and then we are able to have enough for leftovers for lunch the next day.
