Trim Healthy Mama Recipe--Open Face Enchiladas


This recipe is a super easy, super fast option for those nights when you don't know what to cook. My whole family loves it. I grew up eating open face enchiladas and have just THM'd the ingredients so it is "on plan" with the help of a frankenfood. 

If you don't know what a frankenfood is, it's an item that can be used on plan but not one that purists of the plan like to use. 

This meal is considered an "S". 

If you don't know THM lingo, totally fine! Make this up and enjoy a healthy meal! 

What you need...

-Package of low carb tortillas
-1 pound of lean hamburger meat
-Onion
-Lettuce
-Cheddar Cheese or Colby Jack (one of our favorites!)
-Sour Cream
-Salsa
-Guacamole (I normally just smash up an avocado and add some Himalayan Pink salt, pepper and Young Living Lime Vitality essential oil)  
-Coconut Oil

What you do...
-Put some coconut oil in a pan and melt it. While melting chop up a few onion slices. Saute in the coconut oil for a couple of minutes before adding your hamburger meat to cook. 
-Brown you hamburger meat.
-While browning your hamburger meat, melt some coconut oil in another pan to fry your low carb tortillas. 
-Get a plate out with some napkins or paper towels to soak up any excess grease. Toss a tortilla into the melted coconut oil. 
-While the meat is browning and the tortillas are frying (multi-task momma!) chop up your lettuce and smash up your avocado. 
-When everything is done. Put a fried low carb tortilla on the bottom of your plate. Pile some lettuce and cheese on it. Place some browned hamburger meat on top. Top it all off with sour cream, salsa and guacamole.
-Enjoy!
