Trim Healthy Mama Recipe: Stuffed Peppers



This is a recipe I have made over and over again until I finally came upon the tastiest and easiest way to go about making them! They are Trim Healthy Mama approved but are a definite crossover if you add as much cheese as I do on them! 

Don't know the Trim Healthy Mama lingo then just know these are healthy! 

These are one of my family's favorite recipes to make and a big hit when I take them to someone as a meal. 

What you need

4 peppers (We like orange or red)
1 pound of ground beef
1 cup of brown rice
2 small cans of tomato sauce no salt added
1 8 oz bag of cheese of your choice (We love Colby Jack)
Himalayan pink salt
pepper
Italian seasoning
garlic powder

What you do

Chop off the tops of the peppers and shake the seeds out. Boil some water in a huge soup pot. Dump the peppers in there so they will boil nice and soft.

Preheat your oven to 350 degrees.

Fix your brown rice. Stove. Microwave. I'm not picky.

Brown your ground beef in a pan. Once browned add in the two cans of tomato sauce, the salt, the pepper, the seasoning and the garlic powder. There are no measurements on this because I just do it to taste.

Stop boiling your peppers. Carefully take them out and put them in an 8x8 pan.

Once your brown rice is done pour it into the pan with your ground beef and tomato sauce. Mix all together.

Spoon the rice/ground beef/tomato sauce filling into the peppers.

Top with cheese. A LOT of cheese. Yum!

Bake in the oven for 20-30 minutes until cheese is melted and crisping on the ends.

Perfection!

Super easy and super tasty.
