14 Days of Healthy Suppers






Ever since we welcomed Kendall child number three into our household 14 months ago I have hugely struggled with meal planning.

Prior to Child #3
-Meal planning (matching with sales of course!)
-Coupon clipping.
-Grocery List Making.
-Budgeting the list to make sure it meets our budget limitations.
-Shopping easily for those items.
-Making healthy, yummy meals during the week.

After Child #3
-Frantically grab wallet.
-Forget any and all coupons.
-Who needs to meal plan? It's all in my head!
-Shopping the store piling items in my cart.
-Getting home and realizing we have nothing to eat.

Anyone else struggle with this?

When I have any "free time" and let's put the emphasis on the quotation marks on there because free time is not necessarily free time. My mind is so scrambled when I get a free moment I forget what I really need to do and in the moments of remembering I forget to write them down.

You all...I am still struggling with the entire thriving in kid chaos!

So I told my husband last night- no more! I'm tired of eating junk because I don't plan ahead of time to make healthy meals for us. It has affected my mood, my tiredness, my waistline and my health. So I decided that surely it would be easy to find 14 healthy meals to make and simply REPEAT them. Maybe if I found something new I'd toss it in there in a month or so but we are focusing on finding 14 meals that are easy, healthy and pretty affordable and making a plan to make them several times over but not weekly (because I think my taste buds would burn out on weekly!).

Lucky for you all...I'm sharing my meal plan with you all so you can literally just take these meals, make yourself a quick grocery list and HAVE A PLAN. I'm saving you time. You are welcome.

Meal 1- Slow Cooker Chicken Enchilada Soup.

Slow Cooker Chicken Enchilada Soup- holy moly this is good! One of my favorite Paleo soups of all-time.


Meal 2- Open Face Enchiladas



Meal 3- Stuffed Peppers




Meal 4- Individual Meatloaf Balls with Cauliflower Mashed Potatoes



Meal 5- Parmesan Chicken Bake with a side of brown rice



Meal 6- Sausage, Sweet Potato, Apple and Onion Stir Fry. 

September 2013  Whole30 Dinner Day 1 Chicken Apple Sausage Skillet Yum!  Recipe: 4 Aidell's Chicken Apple Sausage - 1 green apple - 1 white onion - 1/2 sweet potato, cut in rounds - coconut oil. Slice all ingredients. Heat oil in skillet. Saute ingredients. AWESOME!:

Meal 8- Pizza Quesadillas

This is my own simple recipe.

I take low carb tortillas, put a TBSP of sugar free pizza sauce on it, 6 slices of pepperoni, a small handful of beef or sausage crumbles and mozzarella cheese. Fold it over and cook it in a pan in coconut oil.

Fixes that pizza craving without all of those carbs!

Meal 9- Spaghetti!

We make this healthier by using Dreamfields pasta! Love that stuff! Homemade spaghetti sauce + a meat of some kind we have on hand (hamburger or polish sausage).

Meal 13- Trim Healthy Mama Pancakes. This is in the Trim Healthy Mama cookbook. We ADORE these and get a ton of protein from them thanks to the cottage cheese and egg whites.

So there we go! 14 healthy, delicious, easy meals!

If I have to spend too much time on it, it's not going to happen.

We'll eventually swap a recipe out for something else to change it up but this is a good, solid start.
